Before you get to baking don’t forget to turn your oven on to pre-heat 200ºC

Start by mixing the flour and baking powder together in a bowl.

Add in your cooked turkey mince and cranberries to the bowl and mix together with the flour.

Drop in the egg and olive oil.

The next step is to slowly add in the chicken stock, we’ve tried this several times on average we used around 1 cup of stock, however you may find this varies depending on how dry your turkey mince is and the size of the egg etc. It’s best to add the chicken stock in small dribbles as you combine to form the dough to ensure you get the best consistency, if it’s too wet you will struggle to roll the dough out, too dry and your biscuits will crumble.

Once you’ve formed a dough, roll out onto a floured surface. Here comes the creative part!! Grab some cookie cutters and get shaping those biscuits! We opted for small festive shapes but you can do whatever you like!

Bake times will vary depending on the thickness and shape of your biscuit. We baked ours for 20 minutes but it’s important to check them regular due to the cranberries high sugar content.

Once fully baked allow to cool then enjoy!
